Rajasthan is known for its spicy dishes and mouth-watering sweets. One cannot miss these. These has to be tasted once in lifetime. There are many rajasthani special dishes which are most famous not only in india but also in world. The ancient princely state of Rajasthan gave rise to a royal cuisine. The Rajas who went on hunting expeditions ate the meat or the fowl that they brought back.

Daal, Baati & Churma

Rajasthani food is incomplete without the mention of the famed Dal-Baati-Churma. It consists of baatis or flaky round breads baked over firewood or over kandas (i.e. cow dung cakes) as done in villages. The most exotic dish you will ever find and typically most heard Rajasthani dish. Round Batis served with dal and sweet Churma.

Baatis can be baked in a gas tandoor or an electric oven as well. But one thing common for baatis, irrespective of their cooking technique is that they are always served dipped in ghee accompanied with panchmel or panch kutti dal and churma.

Ghewar

This delicious dessert is a Rajasthani delicacy popularly made during the festival of Teej. It is disc-shaped sweet made with all purpose flour and soaked in sugar syrup. The Fragrance of this sweet is enough to say. Served with Rabdi. You can find this sweet in markets of Jaipur easily. Rajasthani Kadhi

Kadhi is a dish made from gram flour (besan) and sour curd/yogurt and actually originated in Rajasthan.Unlike punjabi kadhi, no pakodas (or gram flour fritters) are added to the rajasthani version of kadhi, making this recipe both light to eat and easy to make.

Pyaz Kachori
